Winemaking Details:
- HARVEST: Grapes are hand-harvested in small 17 kg crates with careful selection of the bunches.
- VINIFICATION: Soft pressing of the grapes, followed by cryomaceration before fermentation.
- FERMENTATION: In truncated conical and refrigerated stainless steel tanks.
- FERMENTATION TEMPERATURE: 28-30°C (82-86°F).
- LENGTH OF FERMENTATION: 5/6 days.
- MALOLACTIC FERMENTATION: In stainless steel tanks.
- AGEING: 10 months in stainless steel tanks, followed by 4 months in the bottle.

VINTAGE NOTE (2023):
The 2023 vintage faced significant climatic challenges, starting with frequent rainfall during winter and spring, and a wet June that increased the pressure of downy mildew.Ā San Polo successfully managed production due to timely agronomic practices and favorable altitude.Ā Summer included short but intense heatwaves in July.Ā From mid-August, with the start of veraison, ripening was slow and steady, helped by dry, breezy days and noticeable diurnal temperature shifts.Ā These conditions were beneficial for Sangiovese, which reached full phenolic maturity by the end of September.Ā The harvest occurred under ideal conditions with mild temperatures and limited rainfall.Ā The resulting wines are remarkably balanced and expressive, showing finesse, depth, and a clear territorial identity.
TASTING NOTE:
The color is brilliant ruby red with purplish glints.Ā The bouquet is intense and persistent, with fresh aromas of red cherries, violets, blackcurrants, and spiced orange peel.Ā It is well-structured and balanced, featuring satisfying tannins, a velvety texture, and aromatic persistence.Ā The forest fruits and cherries nuances, typical of the grape, make it easy to drink, yet intense and elegant.
SERVICE:
Serve at a temperature of 16°C (60°F) after uncorking the bottle shortly before consumption. The FORMAT is 750 ml.
