VINEYARD:
The winery’s own 20 ha. vineyard is located at the foothills of Jaizkibel Mountain, in the surroundings of the winery itself. The vineyard is oriented towards the south, which protects it from the wind and damp of the nearby Cantabrian sea, allowing it to enjoy excellent sunshine. It is a trellis grown vineyard using a double Guyot training system. The plantation layout is 2.60 x 1.20 (3,200 strains/hectare). The plot has a clay-like soil arising from calcareous marlstones with fragments of limestone.
PROCESS:
Grapes are harvested and transported in small crates. This is followed by destemming and crushing, then rinsing and soft pressing. The first must undergoes cold static settling at 8 to 10°C. The wine is stored in tanks at a low temperature to maintain the naturally occurring carbonation. The process includes gentle clarification and stabilisation. Sterile bottling and filtration are done through microbial stabilisation at a low temperature.
VINTAGE 2025:
The vintage was shaped by complex weather conditions starting in the spring, with frequent rainfall and wind during flowering and fruit set, which reduced production potential and led to occasional outbreaks of mildew in some plots. Summer began with rain and high humidity. Unusually high temperatures by mid-August caused some dehydration in the vines and accelerated ripening, resulting in smaller clusters and a further drop in yield. Harvesting began on 5 September, a week earlier than usual. The grapes showed excellent ripeness and were in very good health. The total volume of harvested grapes was lower than expected, similar to the previous two years. The August heat reduced malic acid levels in the musts, leading to a gentler, more balanced acidity. Despite the climatic challenges and smaller harvest, the 2025 vintage has produced a balanced and expressive txakoli of remarkable quality.
TASTING NOTES:
The wine is clean and bright. It has a pale yellow colour with greenish glints against the light. When poured from a certain height, the presence of tiny carbonation bubbles, typical of this type of txakoli, is revealed. On the nose, there are intense aromas of white fruits (pear and apple), citrus fruits (grapefruit), and tropical fruits (pineapple and passion fruit), all accentuated by the subtle effervescence of natural carbon dioxide gas. The mouth is balanced and fresh, with a quite sharp taste and well-integrated acidity. It is agreeable on the palate with hints of citrus and tropical fruits in the aftertaste. It has a long, aromatic finish.
FOOD PAIRING:
It pairs well with appetisers, hors d’oeuvres, mild cheeses, shellfish, fish, rice, and pulses. The serving temperature is 8° to 10°C. Store in a well-ventilated, cool, dark place. It keeps in the bottle for up to two years.
