The source of some of the most sought-after white wines of the MĂąconnais, Pouilly-FuissĂ© is produced exclusively from the Chardonnay grape and tends to be slightly richer in style than wines from its northern neighbor, the CĂŽte de Beauneâmainly due to warmer weather. Wines from Pouilly-FuissĂ© have some versatility; they can be enjoyed young and can also often improve with a little time in the cellar. Pouilly-FuissĂ© wines are considered some of the best values for white Burgundy.
Similar to the CÎte de Beaune, the soils of Pouilly-Fuissé are mainly limestone and clay. The appellation includes the communes of Fuissé, Solutré (which includes Pouilly), Vergisson and Chaintré. The richest Chardonnay comes from Fuissé and Solutré-Pouilly, whereas the Chardonnay at higher elevation, from Vergisson, expresses more minerality and finesse.
This Pouilly-FuissĂ© âVieilles Vignesâ is made from the Domaineâs oldest vines, some of which are as old as 85 years. Firmly rooted in their clay-limestone soil, the vines absorb plenty of minerals resulting in a complex wine, with plenty of body and a subtle impression of sweetness. To enhance the characteristics of the terroir, fermentation is left to occur naturally, on its lees and exclusively in oak barrels, and lasts 11 to 12 months.
